Winemaking Process The Shiraz grapes were fermented in small open fermenters. A batch of the Hunter shiraz was co-fermented with the white Viognier grape. The wine was matured in 20% new and 80% 1 – 3 year old French oak Hogsheads for 9 months prior to a light filtration and bottling.
